Here is an amazing Agave Lime Pie recipe that is sure to impress. The recipe is a perfect sweet tangy treat for any time of the year, but especially in the spring and summertime.
Agave Lime Pie:
2 tablespoons cornstarch
1 1/2 cups water
1 tablespoon unsalted butter
2 eggs, well beaten in a small bowl
1 cup fresh lime juice- strained
1 tablespoon finely grated lime rind
2/3 cup agave nectar
1 teaspoon powdered, unflavored gelatin dissolved in 1 1/2 tablespoons water
Whipped cream
Thinly sliced limes
9-inch prepared pie shell- we suggest graham cracker crust
Instructions:
Mix cornstarch to a paste with a small amount of the water. Once the cornstarch is in paste form, add the rest of the water. Place the mixture in a medium saucepan. Stirring constantly with a wooden spoon, cook over low heat, until the mixture is thickened. Slowly, stir in the butter.
Remove saucepan from heat and stir in the lime juice and zest. To temper the eggs, whisk in a small amount of lime mixture. Next, add the remaining eggs into lime mixture. Once again, stirring constantly on very low heat, return the saucepan and cook for about 5 minutes. You are finished cooking and stirring once the mixture has thickened. Remove saucepan from heat. Mix in agave nectar first, then dissolve gelatin until well combined. Let cool slightly, about 10 minutes. Pour into pie shell and chill overnight. Finalize with whipped cream and lime slices. Slice, eat, and enjoy!
